What if you could prevent food safety problems before they happen? That’s exactly what HACCP is designed to do. With the right HACCP training, your team can protect customers, reduce food safety risks and build a stronger food safety culture in your business.
At Etihad Pioneers Training Academy in Riyadh, we train food businesses across Saudi Arabia to implement, monitor and maintain effective HACCP systems.
What Is HACCP?
HACCP stands for Hazard Analysis and Critical Control Points. It’s a systematic food safety management system designed to identify, evaluate and control hazards that could make food unsafe.
HACCP is recognised internationally and is based on principles published by the Codex Alimentarius Commission, the international food standards body run by the FAO and WHO. As a result, it’s used by food businesses around the world, from small restaurants to large food manufacturers.
Why Is HACCP Important?
HACCP takes a proactive approach rather than a reactive one. In other words, instead of waiting for a food safety incident and then taking corrective action, HACCP helps you:
- Identify potential hazards in advance, whether biological, chemical, physical or allergenic
- Assess the risks, so you can focus on what matters most
- Establish effective controls, preventing problems before they occur
- Prove your controls work, because every check is monitored and recorded
Ultimately, HACCP isn’t just about reacting to problems. It’s about identifying hazards, controlling risks and preventing food safety failures before they happen.
The 7 Principles of HACCP
Every HACCP system is built on seven principles:
- Conduct a hazard analysis. First, identify the hazards at each step of your process.
- Identify critical control points (CCPs). Next, find the steps where control is essential, such as cooking or chilling.
- Set critical limits. Then define the safe limit for each CCP, for example a minimum core temperature.
- Monitor CCPs. Check each CCP regularly to confirm it stays within its limit.
- Take corrective action. If a limit is missed, act immediately to keep unsafe food from reaching customers.
- Verify the system. Regularly confirm that the HACCP system is working as intended.
- Keep records. Finally, document every check, so you have evidence your food is safe.
What Your Team Learns on HACCP Training
A HACCP plan only works when the people running it understand it. For this reason, our HACCP training teaches your team to:
- Implement HACCP, including building process flow diagrams and conducting hazard analysis
- Monitor CCPs accurately during daily operations
- Complete food safety documentation, such as temperature logs and monitoring records
- Take corrective actions when a critical limit is missed
- Verify and review the HACCP system as menus and processes change
In addition, delegates work on practical exercises, building a HACCP plan for a real menu item or production process from their own operation.
Who Should Attend HACCP Training?
HACCP training suits anyone responsible for food safety systems, for example:
- Executive chefs, head chefs and sous chefs
- Kitchen and food service managers
- QA and food safety supervisors
- Central kitchen and food production managers
- Hotel and catering operations managers
